Featured Technology Frozen Durian

According to information from the Plant Protection Department – Ministry of Agriculture and Rural Development, Vietnam has 3,000 hectares of durian cultivation, of which 68,000 tons of durian have been granted planting area codes by the General Administration of Customs of China. Each year, the country harvests approximately 1.3 million tons of durian from about 90,000 hectares of growing areas.

Therefore, with such high annual output, ensuring long-term preservation of durian while maintaining its quality and economic value is essential for durian businesses and farming households.
Freezing whole durian fruits is a modern and widely adopted method for effective durian preservation.

What is frozen durian?

Frozen durian is durian that, after being harvested, is carefully cleaned and then placed in a cold storage chamber with controlled temperatures for freezing. Over time, this process produces frozen durian. During storage and even after thawing, frozen durian retains its natural color and flavor.

What process is required to
produce whole frozen durian?

Stage 1: Harvesting the durian
Harvesting standard: The durians must be fully ripe, with the best flavor and quality.

Stage 2: Cleaning and sanitizing the durian
The fruits are treated and washed with clean water for 4–5 minutes to remove dirt, bacteria, and foreign matter.

Stage 3: Quick freezing
The durians are placed in a freezing chamber at –40°C for about 1 to 2 hours, depending on the size of the fruit.
After the quick-freezing process is completed, the whole frozen durians are stored in a cold storage facility at –18°C to maintain deep-freeze conditions. Storage period: 6–24 months

Stage 4: Thawing for use
Thawing time: About 6 hours at room temperature before consumption.
